Instructions
 

Preparation

  • Preheat your oven to 356 °F (180 °C). Lightly grease a 9.5-inch tart pan.
  • In a food processor, grind the almond flour and rolled oats into a fine flour.
  • Combine this mixture with cocoa powder, salt, soft dates, maple syrup, and melted coconut oil. Blend until the mixture becomes sticky.
  • Press the sticky mixture into the tart pan, forming an even layer on the bottom and slightly up the sides.
  • Bake in your preheated oven for 15-20 minutes until firm.

Filling

  • Heat the frozen raspberries in a saucepan over medium heat until they become mashable.
  • Strain the mixture through a fine mesh sieve to collect the juice, discarding the seeds.
  • In a separate bowl, dissolve the cornstarch and agar powder in a small amount of water.
  • Combine this mixture with the raspberry juice, raw cane sugar, and coconut milk in a pot. Heat while stirring until the mixture thickens.

Assembly

  • Pour the raspberry filling into the cooled tart shell, spreading it evenly.
  • Chill in the refrigerator for at least 2 hours to set.
  • Garnish with fresh raspberries, red currants, pomegranate seeds, and colorful sprinkles before serving.

Notes

Consider adding a pinch of cinnamon or almond extract to the filling. Experiment with different berries or a layer of vegan chocolate ganache to customize.
