Ingredients
  

For the vegetable filling

  • 2 tbsp olive oil a silky richness to sauté in
  • 1 large onion, finely chopped sweet and fragrant
  • 3 cloves garlic, minced aromatic with a bit of zing
  • 10 oz mushrooms, sliced earthy and tender
  • 10 oz fresh spinach leaves vibrant and luscious

For the cheese mixture

  • 1 15 oz container ricotta cheese creamy and velvety
  • 1.5 cups shredded mozzarella cheese melty and gooey
  • 0.5 cup grated Parmesan cheese sharp and tangy
  • 1 egg to bind the flavors

For assembly

  • 12 lasagna noodles, cooked and drained hearty layers
  • 1.5 cups shredded mozzarella cheese for topping, ensuring a bubbling finish
  • Salt and pepper to taste essential seasonings
  • 0.5 tsp nutmeg optional, adding warmth
  • Fresh parsley for garnish optional, a pop of color

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the finely chopped onion and cook for about 5 minutes until softened.
  • Add the minced garlic and sliced mushrooms, cooking them for around 7 minutes until golden.
  • Toss in the fresh spinach leaves and cook for an additional 2-3 minutes until wilted.
  • Season with salt and pepper to taste and set aside off the heat.

Cheese Mixture

  • In a large mixing bowl, combine ricotta cheese, 1.5 cups shredded mozzarella cheese, grated Parmesan cheese, egg, and a touch of salt and pepper.
  • Mix until creamy and well-combined.

Assembly and Baking

  • Preheat your oven to 350°F (175°C).
  • In a 9×13-inch baking dish, spread a thin layer of the mushroom-spinach mixture at the bottom.
  • Layer 4 lasagna noodles on top, followed by a generous layer of the cheese mixture, then repeat twice more, finishing with the mushroom-spinach on top.
  • Top with the remaining shredded mozzarella cheese and cover the dish with aluminum foil.
  • Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes for a bubbly finish.

Resting

  • Let the lasagna rest for 10 minutes after baking to set for better slicing.
  • Before serving, garnish with fresh parsley.

Notes

For a lighter option, use low-fat ricotta and mozzarella. Whole wheat lasagna noodles can add extra fiber. Ensure mushrooms are not overcooked and let the lasagna rest before slicing.
