Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large mixing bowl, toss your sweet potato cubes with the olive oil, maple syrup, cinnamon, salt, and pepper until well-coated.
  • Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.

Cooking

  • Roast the sweet potatoes in the oven for 25-30 minutes, tossing halfway through.
  • While roasting, toast the walnuts in a dry skillet over medium heat for about 5 minutes until fragrant.
  • Once sweet potatoes are tender and caramelized, remove from oven.
  • Let cool slightly before topping with crumbled goat cheese and toasted walnuts. Garnish with fresh parsley.
