Preparation

  • Cut watermelon into chunks and place them in a blender. Puree until smooth. Optionally, strain the puree for a silkier texture.
  • In a large mixing bowl, combine pureed watermelon with heavy cream and milk. Add sugar, vanilla extract, lemon juice, and a pinch of salt. Stir until sugar dissolves.

Churning

  • Pour the mixture into an ice cream maker and churn for 20-25 minutes until it reaches soft-serve consistency.
  • Transfer the ice cream to an airtight container and freeze for at least 2-3 hours to firm up.

Serving

  • Scoop generous portions into bowls or cones and serve with fresh mint or chocolate syrup if desired.

Notes

For a healthier version, substitute heavy cream with coconut milk or Greek yogurt. You can reduce sugar by using honey or maple syrup. Consider adding fresh herbs or nuts for variation. Ensure watermelon is ripe for best flavor.
