For the soup base

Preparation

  • In a mixing bowl, combine the ground chicken or turkey, soy sauce, sesame oil, ginger, and garlic. Mix until well blended, ensuring each ingredient is incorporated for maximum flavor.
  • Take a wonton wrapper and place a teaspoon of the chicken filling right in the center. Moisten the edges of the wrapper with water to help seal it. Fold the wrapper in half to form a triangle, pressing down to seal securely.
  • To shape the wontons, bring the two corners of the triangle together so they meet, and pinch to secure them. Repeat this process for the remaining wrappers and filling, setting the formed wontons aside.

Cooking

  • In a large pot, bring the chicken broth and water to a vigorous boil over medium-high heat.
  • Carefully add the wontons to the pot and cook for about 5-7 minutes, or until they float to the surface, indicating they’re cooked through.
  • Stir in the chopped bok choy and sliced mushrooms, allowing them to cook for an additional 2-3 minutes until they turn tender.
  • Season the soup with salt and pepper to taste, ensuring the seasoning is just right.
  • Ladle the steaming soup into bowls and garnish generously with sliced green onions. Serve immediately.

Notes

Ensure that the filling is well-seasoned before wrapping. For extra flavor, consider adding chili oil or crushed red pepper when serving. Store leftovers in an airtight container for up to three days, and avoid adding wontons until ready to serve to maintain their texture.
