Preparation

  • Place the softened cream cheese in a mixing bowl. Beat in the mashed raspberries and powdered sugar until the mixture becomes smooth and creamy.
  • In a separate microwave-safe bowl, melt 1/2 cup of white chocolate chips. Heat them in the microwave, stirring every 20 seconds until completely melted and smooth.
  • Pour the melted white chocolate and vanilla extract into the cream cheese mixture. Stir well until everything is fully combined.
  • Gently fold in the graham cracker crumbs, taking care not to over-mix.
  • With a spoon or your hands, scoop out portions of the mixture and roll them into small balls, about 1 inch in diameter. Place these balls onto a parchment-lined tray.
  • Transfer the tray to the freezer and let them chill for at least 1 hour or until they are firm to the touch.

Coating

  • Melt your remaining 1/2 cup of white chocolate chips. Dip each cheesecake ball into the melted chocolate, ensuring they are fully coated.
  • Roll each ball in the crushed graham crackers for added texture. Place them back on the parchment-lined tray.
  • Return the tray to the freezer for an additional 15 minutes to set the chocolate coating.
  • Once firm, the cheesecake balls are ready to serve.

Notes

For added flavor, consider adding a teaspoon of lemon zest. Store in an airtight container in the refrigerator for up to 5 days or freeze for longer storage.
