For the skewers

Instructions
 

Preparation

  • In a glass jar or blender, combine the creamy peanut butter, tamari, red curry paste, pickled ginger, and sesame oil. Blend until smooth, adding water as needed to achieve desired consistency.
  • In a bowl, mix the sweet Thai chili sauce, tamari, chopped garlic, grated ginger, and chili paste. Add the cubed flank steak and toss to coat evenly. Allow to marinate for at least 10 minutes.
  • Carefully thread the marinated steak onto skewers, soaking wooden skewers in water beforehand if using.

Cooking

  • Preheat grill to medium-high heat. Grill skewers for 8 to 12 minutes, turning occasionally, until lightly charred and cooked to preferred doneness.

Serving

  • Serve grilled skewers over a bed of fluffy rice or coconut rice. Garnish with lime wedges, avocado slices, sesame seeds, and cilantro. Offer the peanut sauce on the side.
