Preparation

  • Preheat your oven to 350°F (180°C) to ensure even baking.
  • In a large mixing bowl, combine the shredded zucchini, sliced green onions (if using), beaten eggs, sour cream, and melted butter. Stir in the shredded cheddar cheese.
  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
  • Pour the batter into a greased 9x5 inch loaf pan, ensuring it is evenly distributed.

Baking

  • Place the loaf pan in the preheated oven and bake for 50-70 minutes, or until a toothpick inserted in the center comes out clean.
