Preparation

  • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  • In a medium bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, salt, and black pepper. Mix well.
  • Dip each thin zucchini slice in the beaten egg, then roll in the Parmesan mixture to coat evenly.
  • Arrange the coated zucchini slices on the prepared baking sheet, leaving space between each slice.
  • Lightly spray or drizzle the slices with olive oil.

Baking

  • Place the baking sheet in the preheated oven and bake for 20-25 minutes, flipping the crisps halfway through.
  • Remove from oven once the zucchinis are golden and crispy, then let cool slightly before serving.

Notes

For added flavor, mix in dried Italian herbs or a pinch of cayenne pepper. Store any leftovers in an airtight container in the refrigerator for up to three days, or freeze for later use.
