Ingredients

- 2 cups fresh or frozen corn kernels
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese (or feta)
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 tsp fresh lime juice
- 1/4 cup chopped fresh cilantro
- Salt and pepper, to taste
- Mini tortilla chips or small cups for serving
Instructions
- If using fresh corn, sauté the kernels in a pan over medium heat for about 5 minutes until slightly charred. If using frozen corn, thaw and pat dry.
- In a medium bowl, combine mayonnaise, sour cream, chili powder, smoked paprika, lime juice, salt, and pepper.
- Add the sautéed corn, crumbled cotija cheese, and cilantro to the dressing. Stir gently to coat.
- Spoon the mixture onto mini tortilla chips or into small cups and garnish with extra cheese and cilantro.
Notes
For a lighter version, use low-fat mayonnaise or Greek yogurt and low-fat sour cream.
